You'll feel like a Skinny Cow and not a Fat pig!


It's hard when you are a college student to maintain your weight......'Okay... it's been hard for me... to maintain my weight since I started back to school last fall.

Breakfast, lunch and dinner has been a challenge, I don't have time to cook healthy low caloric meals in between school and homework....So this is where quick snacks come into play. I only had time one morning on the way to class to grab a candy bar..so i stopped at my local Kroger's to get one. A reese's peanut buttercup is what I had in mind but I came across a new candy bar and was curious to try it.

Skinny Cow, were the first two words that caught my eye, followed by Heavenly Crisp. They were on sale 2 for a $1.00 so I got two. " Skinny Cow Heavnly Crisp is a chocolate wafer like candy bar with a rich chocolate taste. It is very, very light, and practically melts in your mouth. I liked the texture, crispy.. just like they stated, and a fudge like chocolate flavor. "Mmmmm". ..But what makes this candy bar an even bigger plus, is that it is only 110 calories!

It taste delicious and it's low in calories, I can't state that about many low caloric goodies out there..BUt I can tell you that I feel more like a 'Skinny Cow and less like a fat pig! when I eat one, or two... The only minus is that the candy bar is soooo... Skinnnnnnny, one has to have at least two, to get the full effect...Maybe however there is a reason for it's skinniness.... " Okay I'm sounding more like a pig...Mooo-oink.
But don't take my word for it... try it.

CHOCOLATE - HAZELNUT THUMBPRINTS


Here's another yummy recipe I can't wait to try from Cooking light Magazine's 12/ 2009 issue..Chocolate Hazelnut Thumbprints....chocolate and nuts combined are two of my favorite's in any chocolate dessert..



4.5 ounces all purpose flower ( about 1 cup )
1 cup powdered sugar
1/3 cup of unsweetened cocoa
1/4 teaspoon salt
1/2 cup butter, soften
2 large egg yolks

1 teaspoon instant espresso ( optional )
but, it will intensify the flavor of the chocolate cookie..

1/2 teaspoon of vanilla extract
2/3 cup finely chopped hazelnuts, toasted
1/3 cup hazelnut-chocolate spread ( such as Nutella )



1. preheat oven to 350 degrees.

2. Weigh or lightly spoon flour into a dry measuring cup; Level with a knife.

Combine flour, sugar, cocoa, and salt; stir with a whisk.. Place butter in a large bowl, and beat with a mixer at medium speed until light and fluffy ( about 2 minutes ). Stir egg yolks with a Whisk, adding espresso, if desired.

Add the yolk mixture and vanilla to butter; beat well. Add flour mixture to butter mixture; beat at low speed just until combined.

3). Turn dough out onto a sheet of wax paper; knead 6 times or until smooth and shiny. Shape dough into 28 ( 1-inch ) balls. Roll sides of balls in nuts, pressing gently. Arrange balls 1 inch apart on baking sheets lined with parchment paper. Press thumb into center of each cookie, leaving an indentation. Bake, 1 batch at a time, at 350 degrees for 10 minutes.

Remove cookies from pans; cool completely on wire racks. Spoon a scant 1/2 teaspoon hazelnut-chocolate spread into center of each cookie.

Yields 28 cookies, serving size 1 cookie ).

Ferrero confections



  I love Chocolate and Nuts and in my opinion there is no better treat than one that combines the two!..this is why I'm a fan of Ferrero Chocolates...they have managed to create and combine a very unique chocolate dessert candy that's in a class by itself.

I first fell in love with the Ferrero Rocher two years ago while shopping at Targets. I was having my usual chocolate cravings and was scanning the check out lane for a candy bar while waiting in line..three small round candies wrapped in gold cellophane caught my eye... "Ooo this looks interesting I'm going to try them.

I opened them as soon as I  got in my car and  popped one in my mouth ....my taste buds were greeted by a smooth layer of milk chocolate, crunchy hazelnuts, a crispy wafer and a creamy chocolate center .."mmmmm.....divine,  different, delightful! and  just when I thought my delight  had come to it's end I was greeted by the final crunch of a crispy whole hazelnut! "oh..I liked that a lot!

The texture and taste of these unique balls of confections offer one a unique experience.. they are Fun, Light and Yummy to eat and like a good potato chip.. you'll find that you can't just eat one!

Ferrero Chocolates can be found at most mass markets near you!

Double Chocolate Cupcake


One of my New year's resolutions for 2010 was to learn how to bake something",  Yep.. I happen to be a Chocoholic that doesn't bake, So I'm currently on a quest to find recipes and easy to bake recipes for beginner's such as myself.
